- Shrimp and Pineapple ceviche fire roasted tomatoes-white bean salsa blue corn chips
- Chayote slaw and Mango Salad with a Citrus-brown sugar-Chile vinaigrette (mango fanned)
- A brown butter lobster and roasted poblano peppers floated on coconut-corn bisque with crisp baguette crackers.
- Dark Rum Grill-roasted pork bones and belly with chimichurri drizzle, cumin and cardamom roasted yams and fried plantains (red onions cilantro pine nut relish)
- Jamaican rum cake -vanilla bean ice cream -cream liquor topping -hot cocoa candied kiwi.
